When trying to describe local BVI cuisine, it’s hard not to start with the Conch Fritter. From island shacks to fine dining restaurants, everyone in the British Virgin Islands has some form of conch fritter on the menu. Definitely a must try, when you are sailing here….
If you would like to try to make them at home after your charter, then here is a good recipe you can try:
CONCH FRITTERS
This recipe features conch, a national food of the British Virgin islands. This is an island favorite, served with a tangy Carribean dressing. Substitute shrimp or lobster if you cannot find Conch!
Ingredients
FRITTERS:
1 cup All-purpose flour
3 tsp Baking powder
1 Egg, large
1/2 cup Milk
1/4 tsp Cayenne pepper
1/2 tsp Basil, dried
1 tsp Garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 cup Firm-packed ground conch meat
1 Onion, small, finely diced
1/2 Green bell pepper finely diced
2 Garlic cloves, minced
Oil for frying
CARIBBEAN DRESSING:
1/2 cup Commercially prepared salsa
1 tsp Lime juice, fresh
1 cup Mayonnaise, real
1 Dash Tabasco
Directions:
In a bowl, mix the flour, egg, and milk. Season with cayenne pepper, dried basil, garlic powder, salt, and pepper. Mix in the conch meat, onion, bell pepper and garlic. Stir until mix holds together well.
Fill a large frying pan with 2 inches of oil and heat to 375 degrees. Drop the batter by rounded tablespoons into the hot oil, and fry until floating and golden brown. Place on kitchen towel to absorb the oil.
For the dressing mix together all ingredients. Serve the conch fritters hot together with the dressing and garnish with lettuce.
